Will scanning with no color , cause the scan to come out very pixalated and blurry ?

B/W images (especially In 'ClearView' mode) are generally sharper than colorized point clouds. Which version of Scene are you using, and what hardware model are you using? No color means that what you see is the result of the pointcloud capture, colorized by intensity return (not actually black and white since no images were captured)
It means that if you scanned at a low resolution, i.e. 1/5 or less, the views will have fewer pixels (and no high res color overlays from the images) to display and the quickviews will be blurrier.
