Does anyone import Trimble E57 files into Scene?
When we do so, the scan filenames default to Scan_0, Scan_00, Scan_000 etc. Is there a method to bring these files in with original filenames?

The e57 format defines where to find the name of a scan in the file header. Scene is reading this field or does the following: if the scan name is empty, it uses the name 'scan_` and appends the scans number. However, it the set name is 'scan_0' then it falls back to using the files base name (since SCENE 2020.0.5).
The e57 file format is an open standard. It would be possible to create or find a tool that can modify the name set in the header.
